Happy new year and I hope 2020 bring lots of positive change for everyone and for the planet!
I love the start of each year as for me, it’s a time to reflect on the previous one and make plans and goals for the year ahead. I know this can be done at any time, but something about the start of a year makes it happen for me.
One of my goals is to make some better food choices for the whole family and I thought I would share one of my all-time favourite breakfasts (recipe courtesy of Cyndi O’Meara).
It is packed with wholesome goodness, tastes delicious and only has 4 ingredients.
- 1 tablespoon shredded or desiccated coconut
- 1 apple, quartered and core removed
- 3 fresh dates (or dried)
- 7 almonds
Place all ingredients in a food processor and blitz for a few seconds a few times until it looks crumbly and crunchy – don’t blitz for too long or it with become a paste!
Eat it as it is, or place a dollop on top of your porridge or yoghurt, or even top with berries!
