The word liquorice means 'sweet root' and its use can be traced back to ancient Egypt, where the root was made into a sweet drink for pharaohs! Much of the sweetness in liquorice comes from glycyrrhizin, which has a sweet taste, 30–50 times the sweetness of sugar.
Liquorice grows to about 1 metre and has long, purple/blue flowers with oblong pod fruits.
Using Liquorice Root Powder
Liquorice Root Powder has a sweet taste and can be added to teas, smoothies, baking, desserts, batters, meat rubs, homemade burger and sausage mixes and so much more.
To make your own burgers/sausages...
Mix 1 tsp liquorice root, 1/2 tsp ground cloves, 1/4 tsp ground coriander, 1/4 tsp white pepper and a pinch of salt with 2 tbsp cold water. The mix into 550g sunflower mince, 2 cloves minced garlic, 4 sprigs chopped thyme and 1 tbsp chopped fresh parsley. Mix well and pop in the fridge for 20 mins to let the flavours infuse. Then fry them in coconut oil for about 3-4 mins on each side. I guarantee that these will be the tastiest you have ever tried!!
