Split peas are a variety of pea grown specifically for drying.
They are a pretty convenient pantry staple since they don’t need to be pre-soaked and they have a fast cooking time.
Once they are cooked through they have a lovely creamy consistency which is great for thickening soups.
Cooking with Split Green Peas
Cover the peas with water or stock, bring to the boil then simmer for 30 to 45 minutes.
To make a delicious summer split pea salad, combine 2/3 cup dried green split peas and 1 ½ cups vegetable broth in a pan over high heat. Bring to a boil, stir, then reduce heat, cover, and simmer for about 20 minutes until the split peas are tender, but not mushy and most of the liquid is absorbed. Then toss the peas in a large bowl with the 2 cups halved cherry tomatoes, 1 cup frozen corn kernels, 2 tbsp each of fresh minced: chives, parsley, basil and oregano. Add a dressing of your choice and enjoy!
