Peppercorns are the fruits of a flowering vine in the Piperaceae family, native to India.
The fruits are small and contain a single large seed and a tiny bit of fruit.
The bite of peppercorns comes from a chemical called Piperine that is found in the fruit and seed of the peppercorn.
As this can break down relatively quickly, it is best to grind the peppercorns as and when you need it (if you want the bite) rather than keeping ground pepper.
