What Is Fregola?

Fregola, also known as giant couscous, is a semolina pasta from Sardinia that looks like toasted breadcrumbs or large pearls of couscous.

Fregola is Italian for “crumb” and that's what fregola can be mistaken for - until you taste it. It has a flavour of a nutty, toasted pasta which makes it a satisfying main ingredient in a pasta salad or as a side dish to seafood.

How To Cook

Cooking With Fregola

Bring 4 cups water with a pinch of salt to the boil and add 1 cup fregola. Cook for 8-10 minutes until al dente. For a hearty flavour, use chicken or vegetable stock for some or all of the cooking liquid.

Fregola is often added to soups - try adding with some meatballs, torn spinach, and chicken stock. Fregola also works beautifully with a small drizzle of olive oil, grated pecorino cheese, and diced parsley.

Love this fregola

I really enjoy this larger style grain, cooks quickly, more chunky and substantial than normal sized couscous. Can do all the usual things with it.
