A delicious, organic version of a timeless classic - although we are more used to them being blanched, roasted and salted nowadays!
Cooking Raw Peanuts
Try making your own peanut butter – it will only take 5 minutes – it’s just so easy!
Blitz 2 cups of raw peanuts in a processor for 4-5 minutes. You’ll see the transformation from crumbs, to a dry ball, to a thick paste and then to a runnier paste – just stop when it looks like the right consistency for you. Then add 1-2 tbsp oil and a pinch of salt and mix.
It's far healthier, tastier and cheaper than store bought peanut butter in my opinion. Keep this in the fridge though as it doesn’t have any preservatives. It should keep well for a good few weeks.
You could make a peanut sauce to dollop over rice, quinoa or veggies, add to a soup, use for baking – think brownies! Or eat them just as they are.
