What Are Pine Nuts?
Pine nuts are the edible seeds of pine trees.
They are shaped like teardrops and a couple of centimeters long. Pine trees take 15 - 25 years to start producing seeds, which take about 18 months to mature in the pine cones.
The seeds are taken out of the cone by hand, and then the second shell is removed before the pine nuts are ready to eat.
Pine nuts have a very delicate taste and texture and are high in protein. They can be eaten raw - they have a soft texture and a sweet buttery flavour. However, their flavour is magnified when they are toasted and add flavour and crunch to a salad.
Cooking with Pine Nuts
Pine nuts are key to traditional pesto. Place 2 cups of fresh basil and 1/3 cup pine nuts in a processor and pulse several times. Then add 3 minced garlic cloves and ½ cup parmesan, pulse a few more times and add ½ cup extra virgin olive oil slowly as the food processor is running. Season to taste and get dipping.
Toasted pine nuts also make an excellent addition to salads, sautéed veggies, fish dishes and noodles – just sprinkle a few over to take your dinner to the next level.
